6. Beef Stew (ESTOFADO DE CARNE) Back


  • 3 tsp oil
  • 1/2 cup chopped onion
  • 2 cloves of garlic, crushed
  • 2 lb stewing meat in cubes
  • 4 cups beef stock
  • 1 tsp cumin, ground
  • Salt and pepper
  • 1 carrot grated
  • 2 cups raw potatoes in cubes

In a casserole heat the oil. Cook the onions and garlic until transparent. Reserve.

Add more oil and brown the meat on all sides for about 10 minutes. Add beef stock, onions, garlic, cumin, salt, pepper and carrot.

Simmer gently until the meat is tender, 1 hour. Add the potatoes and continue cooking until the potatoes are tender.
