10. Pebre Back


  • 4 hot red chili peppers, the sort called “cacho de cabra”
  • 2 cloves of garlic
  • 1 bunch of fresh coriander
  • 4 green onions, scallions
  • 1 tsp dried oregano
  • 1 tbsp oil
  • 1 tbsp vinegar
  • Salt
  • Cold water

Make a paste of the peppers and the garlic, either in the food processor or in the blender. Chop the coriander finely and the onions, mix into the garlic/pepper paste with the oregano.

Stir in the oil and vinegar. Add salt if necessary and thin out with the water.

Variation: add chopped tomatoes.
