37. Orange Carrot Little Balls (BOLITAS DE NARANJA Y ZANAHORIA) Back

  • 6 oranges
  • 6 carrots
  • 1 lb sugar

Wash oranges and grate yellow part of peel. Squeeze and strain juice. Grated carrots finely. Make a syrup with juice and sugar cooking until thick.

Stir in orange peel and carrots. Stir constantly until you can see the bottom of pan. Cool on marble slab or plate. Form into very small balls and roll in granulated sugar.
