80. Punkin Pie (PIE DE ZAPALLO) Back


Pastry crust to line a 9 in. pie pan

  • 2 cups cooked pumpkin
  • 2/3 cup brown sugar
  • 1 tsp ground ginger
  • 3 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 cup cream
  • 2 well beaten eggs
  • 1/4 cup brandy

Prepare the pastry crust and place in the refrigerator. Combine pumpkin, sugar, spices and salt in a mixing bowl; beat in milk, cream, eggs and brandy. Pour into the pie shell and bake in a pre-heated oven at 375ºF for 1 hour or until a knife blade inserted in the center comes out dry.

Cool and serve plain or topped with ginger whipped cream (1 cup whipped cream and one tsp ground ginger).
