Beat the yolks with the sugar. Add starch, flour, baking powder and the walnuts finely chopped. Beat the egg whites separately until stiff. Spread in 12 in. buttered cake ins about 1’ in thick. The mixture makes 3 layers. Place in pre-heated oven 350ºF for 30-35 minutes.
Fill the layers with whipped cream. To make a thick Chantilly cream for this cake, beat fresh cream or long-life cream until just stiff and fold in 2 tbsps. confectioner’s sugar.
