66. Golden Cake (TORTA DE AZÚCAR DORADO) Back

  • 8 eggs
  • 1 1/2 cup of sugar
  • 1 cup of starch (chuño)
  • 3/4 cup of water
  • 1 1/2 tsp of baking powder

Brown the sugar and add 3/4 cup of very hot water. Let cool. Add yolks and the remaining ingredients.

Beat egg-whites until stiff and add to mixture. Alternatively, you beat the egg-whites and let cool before adding the yolks, starch and baking powder. Fill with Chantilly cream.
