22. Loco Pudding (CHUPE DE LOCOS) Back


A dish which can be made with shrimps, clams or other shellfish.

  • 8 locos (abalone) scraped and beaten
  • 2 onion
  • 1/2 cup oil
  • 1 tsp paprika
  • 1 cup grated bread
  • 1 cup milk cream
  • 1 cup tomato sauce
  • 1 cup grated cheese
  • 1 tbsp chili sauce, salt, pepper
  • 1 cup water from boiling the locos
  • 1 tbsp butter

Cook the locos in boiling water. Put them in the water one at the time, waiting for the water to re-boil between each one. When they are tender, slice. Fry the grated onion in the oil until transparent.

Add the paprika, the milk cream, grated bread, tomato sauce and the half of the grated cheese. Add the locos, chili sauce, salt and pepper to taste and 1 cup of water used to boil the locos.

Butter an earthenware dish, fill with the mixture. On top sprinkle the rest of the grated cheese, dot with small pieces of butter and bake in hot oven for about 30 minutes until brown on top.
