Juice of 2 lemons and the grated rind of 1 Pre-heat oven to 325ºF (160ºC). Mix the flour and sugar. Cut in the butter. Mix until it is like coarse breadcrumbs (or you can mix in the processor). Gather into a ball and then press to line an 8 in. square pan. Bake for 20 minutes.
Meanwhile, beat the eggs and 1 cup of sugar until pale and thick. Beat in the lemon juice and the rind lemon. When the pastry base is done, remove from the lemon mixture over. Increase the oven temperature to 350ºF (175ºC) and bake for 20 minutes more. Remove from the oven. Sift liberally with confectioner’s sugar end cut into squares.
