59. Christmas Bread (PAN DE PASCUA) Back


  • 1/2 cup butter
  • 1 1/2 cup sugar
  • 3 eggs
  • 1 cup milk
  • 2 cups flour
  • 2 tsps. baking powder
  • 1 tbsp baking soda
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup dried plums
  • 1 cup candied fruit
  • 1 tbsp vinegar
  • 2 tbsps rum
  • Cloves, vanilla, nutmeg
  • Cinnamon, lemon grind

Beat the eggs, butter, sugar, cloves, vanilla, nutmeg, cinnamon, lemon grind, vinegar and rum. Alternate milk and flour, baking powder and baking soda. Finally add raisins, walnuts, chopped dried plums, candied fruit and sprinkle with a little flour.

Pour mixture into greased pan and cook in pre-heated oven for 10 minutes al 570ºF, then leave in oven for one hour and twenty minutes at 480ºF.
