2. Fried Cheese Empanadas (EMPANADAS DE QUESO FRITAS) Back

  • 2 cups flour
  • 2 tbsps margarine or shortening
  • 1 tsp salt
  • Water
  • 2 cups cheese (Gouda) cut up in 1 cm. squares
  • Oil

Mix flour and salt, cut in shortening. Add enough water for the mixture to hold together. Roll out into a long strip, about 30 by 6 ins. Put the cheese squares on the lower half about 2 in. apart. Wet edges with water or milk. Fold top half of dough down over the cheese and press with the fingers. Cut in squares. Fry in hot oil until golden.
