38. Lucuma Filling (RELLENO DE LUCUMAS) Back

  • 4 lucumas peeled and stoned
  • 1/2 cup cream
  • 1-2 tsp honey

Puree the lucumas in a blender or processor gradually adding the cream. Add more cream if needed to obtain a creamy spreading consistency. Add the honey as desired. Use to fill whipped cream rolls or with store-bought merengues.
